Pumpkin Pie Energy Balls

3/4 cup creamy peanut butter
1/2 cup pumpkin puree
1 1/4 cups gluten free rolled oats
3 tablespoons honey
1 tablespoons cinnamon
1 tablespoons pumpkin spice
-Add all ingredients into a large bowl and stir to combine well.
-Cover the bowl and place it in the refrigerator for 1 hour.
-Remove from the refrigerator and begin to roll your mixture into balls. Place on a baking sheet lined with parchment paper.
-Chill again for two hours.
*These are great for meal prep and store well in an air tight container in the refrigerator.
