1 rice cake
½ an avocado
Salt and pepper to taste
Bring a pot of water to a boil over high heat. Reduce the heat to low, then add eggs and cook 7 to 8 minutes. Drain, cool in ice water and peel.
Top rice cake with avocado, microgreens, salt and pepper. Crumble egg on top.
Enjoy on a lower carb day!
