Let me show you one of my favorite low carb day combos for dinner!
After cooking up a nice grass fed steak, I’ll add in my favorite Lemon Garlic Brussels Sprouts AND Golden Cauliflower Rice.

Here’s those recipes…
Lemon Garlic Brussels Sprouts
INGREDIENTS:
- 1/2 pound Brussels Sprouts
- 4 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 3 cloves garlic, diced
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
INSTRUCTIONS:
Preheat oven to 400 degrees. Cut Brussels Sprouts in half.
In a large bowl combine brussel sprouts, olive oil, lemon juice, garlic and salt and pepper.
Add to a baking sheet lined with parchment paper.
Bake in the oven for 45 minutes or until slightly burnt around the edges.
Toss every 15 minutes or so to be sure they cook evenly.
Remove from oven and place in a large bowl.
Mix in balsamic vinegar and toss well to coat. Enjoy!
Golden Cauliflower Rice
INGREDIENTS:
- 1 bag of cauliflower rice
- 2 tablespoons coconut oil
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- Sea salt and pepper to taste
- Juice of 1 lime Fresh cilantro (for garnish)
INSTRUCTIONS:
Heat coconut oil in a large skillet. Add onion and cook until it becomes soft and golden in color.
Add in cauliflower rice and stir well.
Stir in garlic, turmeric, cumin, salt and pepper.
Let cook for 5-10 minutes, stir frequently.
Remove from heat and add lime juice, salt and pepper. Garnish with cilantro.
Pair this with a meat protein and enjoy on a lower carb day!
