This is a delicious low carb alternative to traditional stuffing!
Low Carb Cauliflower Stuffing
Ingredients:
1 large head cauliflower (cut into small florets)
1 red onion (diced)
1/4 cup celery (diced)
2 cloves garlic (minced)
1/4 cup ghee
s2 tablespoon parsley (chopped)
1/4 cup pecans (chopped)
Salt and Pepper to taste
Instructions:
Preheat the oven to 450 degrees.
In a large bowl, stir cauliflower, onions, celery, and garlic together. Toss with ghee, sage, thyme, sea salt and pepper.
Transfer onto baking sheet lined with parchment paper. Roast in the oven for about 15 minutes, until the onions are soft and cauliflower is starting to brown.
Add parsley and pecans to the pan, stir everything together. Roast for another 10-15 more minutes, until the pecans are lightly toasted.
Enjoy on a lower carb day!
