Today, we want to share this amazing Slow Cooker Burrito Bowl recipe with you, which you can find in the Recipe book!
This recipe is a great hearty and healthy staple! It is great if you are looking to meal prep, bring to a summer party, feed your family, or enjoy for yourself with having leftovers also!
Slow Cooker Burrito Bowl
Ingredients:
• 1 pound boneless skinless chicken breasts
• 1 14.5-ounce can diced tomatoes
• 1 cup chicken stock
• 1 tsp chili powder
• 1 tsp cumin
• 1 cup brown rice
• 1 15-ounce can black beans, drained and rinsed
• Salt to taste
Toppings:
• Chopped cilantro
• Unsweetened greek yogurt
• Salsa
• Diced green onions
Instructions:
Add chicken breast, beans, diced tomatoes, chicken stock, chili powder, salt, and cumin into the slow cooker. Cover and cook on low for 3 hours.
Then add the rice into the slow cooker. Cover and continue cooking on low for another 3 hours. Stir occasionally. Once cooking time is done, shred the chicken and mix all ingredients well. Add to bowls and top with your favorite toppings!
Enjoy on a on higher carb day!
*Note: This will make a big batch and it is great for meal prep!
Brown Rice is rich in selenium, magnesium and antioxidants! It is also higher in fiber and therefore it takes longer to digest, so you are “full longer” which can help with weight management.
