Sweet Potato Noodle Stir Fry
Ingredients:
2 sweet potatoes, spiralized thin
1 pound white mushrooms, sliced
2 cups broccoli florets
8 ounces spinach
A splash of water
Slivered almonds, for garnish and sliced green onion, for garnish
Sauce:
1 tablespoon olive oil
1 teaspoon garlic
1/4 cup Braggs liquid aminos
1 tablespoon honey
Instructions:
Heat the avocado oil and garlic in a large skillet. Add the sweet potato noodles, broccoli florets and mushrooms and a splash of water, cook until the sweet potato noodles are soft, about 6-8 minutes.
Whisk together the sauce ingredients.
Once sweet potato noodles are cooked, add the spinach and sauce to the noodles. Toss well to coat. Let cook until the spinach is wilted. Garnish with green onion and almond slivers.
Enjoy on a higher carb day!
