Recipe: Sweet Potato Noodle Stir Fry

Do you love noodles but looking for a healthy alternative that is just as delicious?

You HAVE to give this Sweet Potato Noodle Stir Fry recipe a try!

It is colorful, delicious and a perfect healthy substitute for regular noodles!

Enjoy this recipe:

Sweet Potato Noodle Stir Fry

Ingredients:
2 sweet potatoes, spiralized thin
1 pound white mushrooms, sliced
2 cups broccoli florets
8 ounces spinach
A splash of water
Slivered almonds, for garnish and sliced green onion, for garnish

Sauce:
1 tablespoon olive oil
1 teaspoon garlic
1/4 cup Braggs liquid aminos
1 tablespoon honey

Instructions:
Heat the avocado oil and garlic in a large skillet. Add the sweet potato noodles, broccoli florets and mushrooms and a splash of water, cook until the sweet potato noodles are soft, about 6-8 minutes.
Whisk together the sauce ingredients.

Once sweet potato noodles are cooked, add the spinach and sauce to the noodles. Toss well to coat. Let cook until the spinach is wilted. Garnish with green onion and almond slivers.

Enjoy on a higher carb day!

Sweet potatoes are one of our go-to healthy carbs! They are a great source of many nutrients such as vitamin A, vitamin B5, B6, thiamin, niacin and riboflavin. They are also high in carotenoids which have been said to help with eye health!

This is an excellent healthy option for those who love noodles!
