Ingredients
Sweet potato fries:
-2-3 large sweet potatoes
-3 tablespoons coconut oil (melted)
-1/2 tablespoon garlic powder
-1/2 tablespoon basil
-1/4 tablespoon paprika
Salt and pepper to taste
Sauce:
-1/4 cup plain yogurt (feel free to use greek yogurt or cashew yogurt)
-Sriracha to tase
-Salt to taste
Instructions
-Preheat oven to 450 degrees Fahrenheit. Wash and dry sweet potatoes. Cut sweet potato in half length wise. Then, cut again length wise. Cut in half horizontally and slice the remaining pieces into about 1/4 inch strips.
-Place sweet potatoes in a large bowl. Drizzle with coconut oil. Add spices.
-Toss until well combined. Place parchment paper on a sheet pan. Add seasoned sweet potato fires, be sure none are overlapping.
-Bake for 10 minutes. Toss. Bake for another 10 minutes.
-While sweet potatoes are baking, combine yogurt, sriracha and salt to make the dipping sauce. Mix together well.
Let sweet potatoes cool for 5-10 minutes and then enjoy on a higher carb day!
