Thai Chicken Salad

By Dennis Heenan June 18, 2018

This salad is PACKED with protein and tons of flavor, and it’s taken right from our Brand New HiitBurn Cookbook!

It’s really simple, but will keep you on track and your tastebuds loving every second.

Here’s the recipe:

Tasty Low Carb Thai Chicken Salad

(ingredients and instructions are below the video)

INGREDIENTS

Salad:

-½ Napa cabbage, thinly sliced
-¼ small red cabbage, thinly sliced
-2 medium carrots, grated
-3 green onion, thinly sliced
-¼ cup minced cilantro
-2 cups cooked, shredded chicken breast
-3 tbsp slivered almonds
-½ an avocado
-Salt and pepper to taste

Dressing:

-1 lime, juiced
-3 tablespoon natural peanut butter
-3 tablespoon Braggs liquid aminos (see below why we use this!**)
-2 teaspoons honey

INSTRUCTIONS

-In a large bowl, combine Napa cabbage, red cabbage, carrot, green onion, cilantro and chicken breast.

-In a small bowl, combine lime juice, peanut butter, Braggs liquid aminos and honey. Whisk until smooth.

-Toss all ingredients in bowl with the dressing. Garnish with almonds and avocado.

Enjoy on a lower carb day and on-the-go!

**We love using Bragg’s Liquid Aminos in place of soy sauce because it has no MSGs, gluten or GMOs! It also contains 16 of the 20 essential amino acids which the body uses for digestion, tissue growth and repair. Nine of the 20 amino acids cannot be produced by the body and need to be consumed through the diet making this a great addition to any meal.
