These Caramelized Banana Pancakes are MOUTHWATERING DELICIOUS! Enjoy on a higher carb day, or even post workout!
INGREDIENTS:
Pancakes:
- 1/2 cup unsweetened almond or coconut milk
- 2 eggs
- 1/2 a bananas
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- A sprinkle of salt
- 1 cup of gluten free rolled oats
- 1 tablespoon coconut oil

Caramelized Banana:
- 1/2 banana
- 1 tablespoon coconut oil
- 1 tablespoon honey
- 1/2 tsp cinnamon
Optional Toppings: Almond butter, shredded unsweetened coconut and/or maple syrup

INSTRUCTIONS:
Place almond or coconut milk, eggs, banana, v extract, baking powder, cinnamon, salt and oats into a blender and blend well, until smooth.
Over medium heat, grease a large skillet with coconut oil. Pour about ¼ cup batter onto the skillet; cook for 2-3 minutes and until bubbles form on the side of the pancake. Flip and cook for about 1-2 minutes more.
Continue with remaining batter.
Once pancakes are cooked, place them on a plate in the microwave to keep warm while caramelizing the banana. Cut banana into 1/2 inch thick slices. Add honey and cinnamon to a bowl.
Drop banana into honey and cinnamon mixture, coat both sides of banana well.
In the same pan, heat more coconut oil over medium heat. Lay down honey coated banana slices, and fry for 2-3 minutes on each side, until golden and caramelized.
Once they are cooked, top your pancakes with them!
Feel free to add almond butter, shredded unsweetened coconut and/or maple syrup as well!
