Low Carb Summer BBQ Salad

This recipe, from the cookbook, is a summer go-to! It’s a Low Carb Summer Chicken BBQ Salad and it is DELICIOUS!

(ingredients and instructions are below the video)

INGREDIENTS

-3 cups cooked, diced chicken
-Barbecue sauce, to taste
-2 cups mixed salad greens
-3 hard-boiled eggs, peeled and crumbled
-2 tomatoes, seeded and chopped
-1 avocado, cubed
-1 cup fresh or frozen corn
-1 cup grated cheddar and/or monterey jack cheese
-Sea salt and pepper, to taste

INSTRUCTIONS

-Toss chicken with enough barbecue sauce to coat. Season with salt and pepper. (Chicken mixture can be heated under the broiler if you want it warm.)

-Pile lettuce into a serving bowl. Add chicken, eggs, tomatoes, avocado, corn, and cheese in thin rows over the lettuce. Season with salt and pepper.

-Serve with dressing on the side

Enjoy in a lower carb day!

Note: this makes about 4 servings, add to recipe as needed.

We love mixed greens because they are packed with vitamins, minerals and antioxidants! Avocados are another great addition because they are full of healthy fats and therefore great to enjoy on low carb days! Avocados are packed with great nutrients such as potassium, vitamin K and folate as well. They are also full of fiber and have even been shown to help skin and hair health! This is a great salad to bring to any summer BBQ and the best part is, it’s healthy and delicious!
